I know I said I would post a recipe every Monday so I apologize for not getting to this on Monday. Here it is, Menu Wednesday, I guess. The next two weeks are going to be crazy to say the least. We need to be out of the home we're in by February 1st so my blogs will be hit and miss.
I decided to post the recipe I use for Turkey Burgers. I got it from http://polwig.com/cooking/chicken-cakes-with-herbs/. I changed a few things. I use ground turkey instead of chicken and I use dry herbs instead of fresh just because the fresh herbs aren't readily available & are more expensive in the winter. I used 1 tbsp & 1 tsp of dried Chives and 2 tsps of dried basil. I replaced the mozzarella cheese with lite mozzarella cheese and of course I didn't cook them in oil. I used a non stick pan instead. I also make 1/4 lb patties instead of chicken nugget sized patties. I put it on a sandwich thin, piled salad on top of the burger and topped it with one of my new favorite things, Trader Joe's Parmesan Ranch Dressing. I'm drooling as I type this. It is so good. Jason & I fought over the left over burger.

Chicken Cakes with Herbs
1 lb ground turkey or chicken
1 cup mozzarella cheese
1 clove garlic
1 egg
1 handful basil
1 handful chives
1 tbsp flour
Oil
Begin by chopping the herbs and mincing the garlic. Place all ingredients, excluding the flour and the oil, and mix with your hands. Once combined add the flour. The mixture should stick together. Heat the oil in a pan over medium high heat. Form small patties, about the size of chicken nuggets, and add them to the heated pan. Brown on both sides, make sure their cooked through.
